Healthy Dark Chocolate Almond Joy Bites

I love Mel's Kitchen Cafe. And I love energy bites. These are the best date energy bites that I've tried! They are fudge-y and healthy and so good! I like to make a lot, so here's a recipe for a double batch.



Healthy Dark Chocolate Almond Joy Bites

Ingredients:
12 oz pitted Medjool dates (about 2 cups)
2 cups (10 oz) unsalted whole almonds
1 cup (3–4 oz) shredded unsweetened coconut
1 cup (about 4 oz) unsweetened cocoa powder
2–4 Tbsp coconut oil (no need to melt)
1 Tbsp vanilla
2 pinches of salt

Directions:
Combine all ingredients together in a food processor and process until the ingredients are finely chopped and the mixture is crumbly, the mixture should hold together when pressed or rolled. If it's too crumbly, add a tablespoon of water or melted coconut oil and process again until it comes together more easily. Roll the mixture into tablespoon-size balls. Store covered in the refrigerator for up to a week.
